Sanhong Bibim Naengmyeon - A Special Bowl Topped with Hwangtae Hoemuchim
Sanhong, located in Geumsan-myeon, Jinju-si. I visited on a weekend afternoon, and as expected, it was packed with people waiting in line. That alone is enough proof that this is a certified gourmet spot in Jinju.

The Essence of Jinju Naengmyeon, and Something Special
I ordered Bibim Naengmyeon (Spicy Mixed Cold Noodles). True to the Jinju Naengmyeon (Jinju-style Cold Noodles) style, it comes with Yukjeon (Pan-fried Beef Pancake), but honestly, the Yukjeon is secondary here. The real highlight is the Hwangtae Hoemuchim (Spicy Seasoned Dried Pollack) sitting right on top.
Hoemuchim (Spicy Raw Fish Salad) on Naengmyeon? It was my first time seeing this combination, and it was as delicious as it was unique. The chewy texture of the Hwangtae and the sweet-and-sour seasoning blend perfectly with the noodles, keeping your chopsticks moving.

A Hangover Cure for the Yangban
If Pyongyang Naengmyeon was food for the common people, it is said that Jinju Naengmyeon was a Haejang (Hangover Cure) dish for the Yangban (Korean Aristocrats). Thinking about how we suffer all day after drinking and crave noodles like ramyeon... I guess the Yangban weren't so different. After all, a refreshing bowl of cold Naengmyeon is the answer to a hangover.
The price is 13,000 won per bowl. Considering today's inflation, it's quite reasonable.
